    The Spirit of the Underground Series celebrates one of the great engineering projects of the past 200 years. A subterranean labyrinth steeped in history that empowers the true lifeblood of London - its people. This exceptional single cask release has been fully matured in an American oak Ex-Bourbon cask and raises a toast to King's Cross St. Pancras station. Kings Cross was opened on the 10th January 1863 and today serves as a busy interchange between six Underground lines. Constructed close to a former industrial area, the location has been extensively redeveloped and is now home to boutique shops, galleries, bars, and fashionable eateries. Cask No.129 produced only 259 bottles, all at cask strength and each with its own number.

    This London based distillery was founded in 2015 and hasn’t looked back since. Gaining local, then national popularity and in 2020, a series of single cask releases specific to various countries abroad. Starting out with a small 2 still set-up, Bimber has recently expanded to meet demand. Additional wooden washbacks were installed in 2019 as well. At the heart of its success is an attention to detail; using malted floor barley and production methods to enhance the flavour of the new make spirit. An intensive cask programme ensures that Bimber works well in a variety of wooden vessels from a young age. Demand means that releases from the distillery are in short supply, with even a small batch range selling out. We can expect more Bimber in 2021 including a new series based on stations within the London Underground network.
