    The 1st Peated began its journey at Bimber's single farm (Fordham & Allen in Basingstoke) where 100% of the distillery's barley is grown. Two-row Concerto was transported to London where it was steeped 3 times over 40 hours before being turned every 8 hours over the following 5 days. The Barely was then dried using a combination of dry and custom-made kiln. The PPM level of peat is 14.4ppm "in bottle". This was a faily unique method of measuring the phenol level as most, if not every other distillery at the time used the phenol level of the barley prior to the mashing process. The pungently smoked grains were than mashed and fermented for seven days in the distillery's iconic in-house crafted washbacks, before being unhurriedly distilled using two directly-fired alembic pot stills. The four casks married together to create The 1st Peated (#463, #464, #470 & #471), were selected to produce the perfect partnership of Bimber's fruity and textural single malt whisky style with the intensity of fragrant and smoudering Highland peat smoke. One of only 1140 individually numbered, full sized bottles.

    This London based distillery was founded in 2015 and hasn’t looked back since. Gaining local, then national popularity and in 2020, a series of single cask releases specific to various countries abroad. Starting out with a small 2 still set-up, Bimber has recently expanded to meet demand. Additional wooden washbacks were installed in 2019 as well. At the heart of its success is an attention to detail; using malted floor barley and production methods to enhance the flavour of the new make spirit. An intensive cask programme ensures that Bimber works well in a variety of wooden vessels from a young age. Demand means that releases from the distillery are in short supply, with even a small batch range selling out. We can expect more Bimber in 2021 including a new series based on stations within the London Underground network.
