    This exceptional Bimber London single malt, single cask whisky release was additionally matured in a Re-charred oak cask and celebrates Elephant & Castle station. Cask No.381/54 was bottled in November 2025 and produced only 320 individually numbered bottles, at a cask strength of 56.5%. The Spirit of the Underground Series celebrates one of the great engineering projects of the past 200 years. A subterranean labyrinth steeped in history that empowers the true lifeblood of London - its people. Elephant and Castle station traces its origins to the City & South London Railway, the world's first deep-level electric underground railway. It opened in 1890 as part of a line that initially ran between King William Street and Stockwell. Today, the station serves both the Bakerloo and Northern lines and is located near the iconic Ministry of Sound nightclub and the Elephant and Castle pub.

    This London based distillery was founded in 2015 and hasn’t looked back since. Gaining local, then national popularity and in 2020, a series of single cask releases specific to various countries abroad. Starting out with a small 2 still set-up, Bimber has recently expanded to meet demand. Additional wooden washbacks were installed in 2019 as well. At the heart of its success is an attention to detail; using malted floor barley and production methods to enhance the flavour of the new make spirit. An intensive cask programme ensures that Bimber works well in a variety of wooden vessels from a young age. Demand means that releases from the distillery are in short supply, with even a small batch range selling out. We can expect more Bimber in 2021 including a new series based on stations within the London Underground network.
