    "a whisky that celebrates love, because it was crafted with it.” Released in time to mark Valentine's Day 2026, a single cask of London single malt from Bimber distillery, London, NW10. Matured in a single ex-Pedro Ximenez sherry cask bottled in February 2026 yielding only 298 individually numbered bottles, which sold out in a matter of minutes. Bottled at natural cask strength, without chill-filtration or artificial colouring. This exceptional expression tells a story beyond flavour. It represents the emotional side of whisky-making: the belief that craftsmanship is an act of care, and that the finest whisky comes from time, patience, and skill. Those same values shape the moments we share, the things we treasure, and the connections we celebrate.

    Bimber

    This London based distillery was founded in 2015 and hasn’t looked back since. Gaining local, then national popularity and in 2020, a series of single cask releases specific to various countries abroad. Starting out with a small 2 still set-up, Bimber has recently expanded to meet demand. Additional wooden washbacks were installed in 2019 as well. At the heart of its success is an attention to detail; using malted floor barley and production methods to enhance the flavour of the new make spirit. An intensive cask programme ensures that Bimber works well in a variety of wooden vessels from a young age. Demand means that releases from the distillery are in short supply, with even a small batch range selling out. We can expect more Bimber in 2021 including a new series based on stations within the London Underground network.

    The first step is to get your whisky to us. We can help with courier collections, or you can arrange transport yourself. Once at Just Whisky, we’ll handle photography and description of your lots and enter your whisky into our auction. We take payment, then pay you within 14 days of the auction end date.
