Founded in 2012 by fermentation experts Shane Baker and Dr Pat Heist, Wilderness Trail Distillery in Danville, Kentucky, has rapidly grown into a world-class producer known as the "science guys of bourbon." Operating on a scenic 163-acre campus and recognized as an official stop on the prestigious Kentucky Bourbon Trail, the distillery sets itself apart through its strict, farm-to-glass philosophy and pioneering use of a 100% sweet mash fermentation process. By using fresh grain, local limestone water, and precise yeast strains for every batch rather than traditional sour mashing, they maintain flawless pH control to yield an incredibly clean, soft, and flavorful distillate. From their smooth wheated and bold high-rye bourbons to their robust ryes—mostly bottled as premium Bottled-in-Bond or Cask Strength expressions—Wilderness Trail's dedication to scientific precision caught the global eye in late 2022 when the Campari Group acquired a majority stake, cementing its legacy as a modern powerhouse of authentic Kentucky whiskey.
