The Malt Shoveller 18 Years Old

An 18-year-old Speyside single malt whisky from The Whisky Connoisseur Scotland, bottled under 'The Malt Shoveller' name. The malt shoveller's task is called "turning the piece." In traditional floor maltings the barley, which has been dampened in by 2 or 3 days submerged in water, is spread out on the stone floors. Soon the grain starts to sprout and generate heat. This is where the malt shoveller's work begins in earnest - and it takes about a week. With rakes and wooden shovels, the barley has to be turned to keep an even temperature. The whole malting process is controlled germination and plays an important part in the flavour of the whisky.
