The Milk & Honey Distillery, Israel's first whisky distillery, has quickly become a notable name in the spirits world. Founded in 2013 in Tel Aviv, it represents a bold venture into whisky production in a country not traditionally associated with this spirit. The distillery's name, "Milk & Honey," is a nod to the biblical description of Israel as a "land flowing with milk and honey," symbolizing abundance and prosperity. M&H Distillery, under the guidance of Head Distiller Tomer Goren and with the initial consultation of the late Dr. Jim Swan, a renowned whisky expert, focuses on creating single malt whisky that echoes the rich traditions of Scottish whisky-making while embracing the unique environmental conditions of Israel. The Mediterranean climate of Tel Aviv accelerates the maturation process, allowing M&H to produce whiskies that achieve complexity and depth in a shorter time compared to those matured in cooler climates like Scotland.
