    Distilled at Lindores Abbey, and then matured in rejuvenated Australian Red Wine casks, before being bottled under the title 'Hairst '25', paying homage to the 'Burning of the Bear'. Each year, the “Burning of the Bear” marks the Fife barley harvest — a celebration of the land, local heritage, and the enduring spirit of Lindores. The staff and members gather around the Bear emblem positioned on the hill to pay tribute to the insignia of Guido, the First Abbot of Lindores.

    Lindores is a relative newcomer to the Scotch industry, being founded in 2017 after sizeable international investment to bring the vision to life. The site is home to an abbey and is the location of the first historical mention of ‘aqua vitae’, or the forerunner of whisky. This explains the 1494 that you’ll see associated with the distillery and has become a major component of the brand which launched its debut whisky in 2021. Ongoing research suggests that distillation was practised here before the official date and visitors to the distillery are able to experience the life of the monks, before setting foot into the more modern version of distillation. Lindores has utilised the surrounding fields to source its own barley, much like the monks would have done hundreds of years ago. The whisky is light and fruity, typical lowland in style and represents another entry in the growing Fife whisky scene that can already count Daftmill, Eden Mill and Inchdarnie amongst its members.

    The first step is to get your whisky to us. We can help with courier collections, or you can arrange transport yourself. Once at Just Whisky, we’ll handle photography and description of your lots and enter your whisky into our auction. We take payment, then pay you within 14 days of the auction end date.
