Lark Distillery, located in Hobart, Tasmania, is celebrated for pioneering the resurgence of whisky production in Australia, being the first distillery to produce single malt whisky here since 1839 when Tasmania's previous distilling license expired. Founded by Bill Lark in 1992, it has played a pivotal role in the Australian whisky renaissance.
