About this bottle

The full set of all five bottlings in the Highland Park Keystones Series. Each edition highlights one of their five keystones of whisky produuction, its importance and why each remains unchanged throughout the distilleries 225 year history.

1. Hobbister is Highland Park's peat moor, lying only 7 short miles from the distillery and overlooks the historic bay of Scapa Flow. Parts of the moor are 9,000 years old and nearly four metres deep in places. The winter months of Orkney are ferocious and 100 miles per hour winds frequently batter the island. The exposed and barren moors offer little cover and so no trees survive in these harsh conditions.  2. Named after the wooden shovels used to turn barley by hand as it germinates – a job carried out industrially for the majority of distilleries. Usually, their hand-turned floor maltings account for around 20% of the malt used in Highland Park but, for this special limited release, a full 100% was used to deliver a powerful intensity of peat smoke. 3. Quercus, the species name for Oak, the hardwood used to make the casks used in whisky maturation across the world including at the Highland Park distillery. The whisky is exclusively matured in 1st Fill Sherry seasoned European oak casks, it showcases the rich flavour of fruitcake and a natural dark golden colour that characterise Highland Park. 4. Gordon Motion, Highland Park's Master Whisky Maker, selected three 2005 vintage, first-fill sherry seasoned American Oak casks from their most northerly warehouse to demonstrate how Orkney's unique climate shapes Highland Park's intensely balanced flavour. Highland Park has named this special edition 'Yesnaby', after the dramatic cliffs on Orkney's Atlantic coastline, the final point on land before Greenland. 5. Hillhead is the final addition to the very collectable Keystone Series from Highland Park, released in April 2018, and only 1,200 bottles were available exclusively for the inner circle members. Hillhead is named after the distillery in Kirkwall and explores the impact of cask harmonisation. Each release was limited to only 1,200 bottles which were sold exclusively to the 'Inner Circle', Highland Park Club members.
