Dunphail Distillery, located in the Speyside region of Scotland, is a venture by the team behind the acclaimed Bimber Distillery in London. Construction of this new distillery began in December 2021, with the aim to craft single malt whisky using highly traditional methods. The site, which was originally a farm steading, has been transformed to include facilities like its own on-site floor maltings, making Dunphail one of the few distilleries in Scotland to malt all of its barley internally, alongside Springbank. This approach ensures a hands-on production process from malting to maturation, emphasizing the creation of "whisky the way it used to be made." The distillery's commitment to traditional practices extends to using long fermentations and directly fired stills, aiming to produce a spirit rich in character and flavor. Production at Dunphail commenced in October 2023, with the first batch of their "fat and fruity" new make spirit being celebrated for its quality. The distillery also offers visitor experiences, where enthusiasts can explore the traditional whisky-making process, from malting to the final maturation stage, and even partake in exclusive tastings. Dunphail's dedication to heritage techniques and environmental sustainability sets it apart as a beacon of traditional whisky production in modern times.
