The inaugural release from Dornoch Distillery and what a way to start. The Thompson Bros have chosen cask number 001 as their first bottling. Distilled on 05/07/2017, matured in a first fill ex-oloroso butt, before being bottled in November 2020, with a yield of 893 bottles.
Dornoch

Based in the historical town of the same name, Dornoch Distillery is situated within the grounds of the castle, in the old fire station which is tiny at under 50 square metres in size. Every drop of spirit that Dornoch produces is precious. This is a family-owned distillery, with the Thompson Brothers preference for the older styles of whisky, which is about maximising flavour before reaching the cask. This process is more manually intensive, epic fermentation times and a less efficient enterprise than other distilleries, but the proof is in the end result. Their debut whisky arrived in 2020 and promptly sold out. With the Thompson Brothers having a successful independent bottling range, the distillery and warehouse are a hive of activity. With their own casks and those from Crowdfunders, we will be seeing more Dornoch whisky in the coming years, but it will be extremely scarce and in high demand.

The first step is to get your whisky to us. We can help with courier collections, or you can arrange transport yourself. Once at Just Whisky, we’ll handle photography and description of your lots and enter your whisky into our auction. We take payment, then pay you within 14 days of the auction end date.
