A book written by the Roca brothers, who famously collaborate with The Macallan on whisky creation and gastronomy, including Macallan Edition No. 2 and the TimeSpirit restaurant at The Macallan Estate. From the 18th to the 20th century, the North as seen from the South: The Roca brothers follow in the footsteps of Samuel Johnson and James Boswell in their 1773 journey through Scotland to pay homage to this land and its fine foods. The dishes created out of this experince are an interpration of Scottish cuisine from the Nediterranean perspective, combining tradition with the innovative spirit of El Celler de Roca.
