    'Quintessence' means "perfectly embodiment" and this limited edition expression of Dalmore truly lives up to that. It is a unique malt whisky which showcases the technical virtuosity and creative vision which sets The Dalmore apart. Paterson's unrivalled passion to push the boundaries of whisky creation led to the sun-drenched vineyards of California where he sought to combine his love of fine wines and exceptional whisky. Following a painstaking search, five different types of red wine casks, signifying the five decades of Richard's career, were hand-selected and sent to The Dalmore distillery. Following an initial maturation in American white oak ex-bourbon barrels, the spirit was split across the five cask types which had individually held; Zinfandel, Pinot Noir, Syrah, Merlot and Cabernet Sauvignon. These casks were then carefully placed deep within Warehouse No.2 to ensure the perfect environment for the wine casks to impart their distinct characteristics into the whisky. After an unprecedented five years finessing, the five casks were brought back together to create a unique and rewarding masterpiece - The Dalmore Quintessence. The only single malt whisky in the world with a five Californian red wine cask finish, and the perfect embodiment of a true master's art.

    Today, Dalmore is a remarkably impressive and successful distillery. Iconic branding and the use of various casks ensures a luxurious image and price tag. Its history is just as impressive with the commonly believed date of 1839 being when it was founded by Alexander Matheson. Looking across towards the Black Isle, the distillery is on the outskirts of Alness and today comprises a large site of various buildings and warehousing. Dalmore has been a prized commodity and the distillery has endured several owners and was purchased by Filipino group, Emperador, in 2014 as part of the Whyte & Mackay acquisition. What endures most about the distillery is the unique still set up, which upon visiting, harbours a mix match of shapes and sizes, plus the spirit stills that are cooled by water jackets. If you do visit, then try to see the old hunting lodge room about the visitor centre that is used to entertain and impress VIPs.

Last second sniping isn’t in the spirit of our auctions and by using this system there is no benefit to doing so.

    The first step is to get your whisky to us. We can help with courier collections, or you can arrange transport yourself. Once at Just Whisky, we’ll handle photography and description of your lots and enter your whisky into our auction. We take payment, then pay you within 14 days of the auction end date.
