    The second release was from local distillery Daftmill, a family (The Cuthbert's) owned and operated seasonal distillery located in the heart of the Kingdom of Fife. Granted a license on St Andrews Day 2005 with the first distillation taking place in December 2005. This is a limited edition Summer batch release that was distilled in August 2011, one of only 6550 bottles released in September 2023. The barley variety Publican was grown in the 43ac field and harvested by John and Sandy on the 28th & 29th of August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010. The 27 first-fill barrels, which had previously been used to mature bourbon from Clermont Springs distillery in Kentuck, were matured on the upper level of their dunnage warehouse.

    Chances are you may have heard of this Fife farm distillery, but have never seen a bottle at retail? That’s because of huge consumer demand versus the small production from farmer and distiller, Francis Cuthbert, who focuses on quality, not quantity. Founded in 2005, Daftmill unlike many distilleries, waited until the whisky was ready. The inaugural bottle arrived 12 years later and since then we’ve seen a variety of single casks and seasonal batch releases entitled Summer and Winter. Distributed by Berry Brothers & Rodd based in London, the Lowland charms of Daftmill revive memories of Rosebank. The distillery takes terroir to another level with the farmer growing, distilling and maturing the whisky on the farm that started the whole process. It’s a very traditional Scottish model, lost in today’s world of efficiencies and scale. Daftmill is sought after and celebrated for some excellent whiskies.
