    A Single Sherry Cask of Daftmill bottled exclusively for Royal Mile Whiskies. One of 638 individually numbered bottles. The Barley variety used for this bottling was Publican, which was grown in the field 43ac and harvested by John & Sandy on the 28th & 29th of August. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010. This was then distilled in 2011, then matured in a single Sherry cask which was then selected by the team at Royal Mile Whiskies to be bottled in 2025 as an exclusive to their retail outlets. This was bottled at cask strength. 59.3% ABV. This sherry cask was chosen as it showed respect to the elegant, fruity spirit which is normally at home in Bourbon casks. With honey-drenched stone fruits, raisins, and spices it has sherried intensity but retains its elegant poise.

    Chances are you may have heard of this Fife farm distillery, but have never seen a bottle at retail? That’s because of huge consumer demand versus the small production from farmer and distiller, Francis Cuthbert, who focuses on quality, not quantity. Founded in 2005, Daftmill unlike many distilleries, waited until the whisky was ready. The inaugural bottle arrived 12 years later and since then we’ve seen a variety of single casks and seasonal batch releases entitled Summer and Winter. Distributed by Berry Brothers & Rodd based in London, the Lowland charms of Daftmill revive memories of Rosebank. The distillery takes terroir to another level with the farmer growing, distilling and maturing the whisky on the farm that started the whole process. It’s a very traditional Scottish model, lost in today’s world of efficiencies and scale. Daftmill is sought after and celebrated for some excellent whiskies.
