Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm's quiet periods; mid-summer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky. The Barley variety optic was grown in their south fields and harvested in the last week of August 2006. It was then stored on the farm to be malted in Alloa during the summer of 2007. This 1st fill Oloroso butt was a favourite of the Cuthbert brothers. It was distilled in the summer season being filled on the 8th of July 2009 and has been bottled exclusively for the UK market at cask strength.

    Daftmill

Chances are you may have heard of this Fife farm distillery, but have never seen a bottle at retail? That’s because of huge consumer demand versus the small production from farmer and distiller, Francis Cuthbert, who focuses on quality, not quantity. Founded in 2005, Daftmill unlike many distilleries, waited until the whisky was ready. The inaugural bottle arrived 12 years later and since then we’ve seen a variety of single casks and seasonal batch releases entitled Summer and Winter. Distributed by Berry Brothers & Rodd based in London, the Lowland charms of Daftmill revive memories of Rosebank. The distillery takes terroir to another level with the farmer growing, distilling and maturing the whisky on the farm that started the whole process. It’s a very traditional Scottish model, lost in today’s world of efficiencies and scale. Daftmill is sought after and celebrated for some excellent whiskies.
