    Bonnington

Bonnington Distillery, situated in Leith, Edinburgh, marks a significant revival in the city's whisky production, being the first single malt distillery in the area for nearly a century. Commissioned in 2019 and starting production in March 2020, it stands on the historical ground once occupied by the original Bonnington distillery, reflecting both tradition and innovation. The distillery is managed by Halewood Artisanal Spirits and operates under the Crabbie brand, a name well-known in Leith's whisky heritage. Bonnington focuses on producing a Lowland-style whisky, characterized by lighter, sweeter notes, and has released its first single malt, matured in ruby Port casks, showcasing a blend of dessert wine notes with poached pear, caramel, and subtle spices. This distillery not only brings back whisky production to Edinburgh but also emphasizes sustainability and unique cask finishes in its operations.
