    The first Klub exclusive bottling from Bimber Distillery, originally only available to Klub members. The spirit was initially matured 1st fill American oak ex-bourbon casks, and then expertly married and finished in Pedro Ximenez sherry butts. Pedro Ximenez (aka PX) is produced from overripened grapes of the same name. The grapes are slowly sundried to produce an exceptionally high concentration of natural sugars. The wine is then aged exclusively via oxidation, producing a viscous and rich sherry packed full of notes of dried fruits, raisins, figs, and dates supporting darker flavours such as roasted coffee, chocolate, and liquorice. An opulent partner to our light, fruit-forward spirit. One of only 1198 individually number bottles.

    This London based distillery was founded in 2015 and hasn’t looked back since. Gaining local, then national popularity and in 2020, a series of single cask releases specific to various countries abroad. Starting out with a small 2 still set-up, Bimber has recently expanded to meet demand. Additional wooden washbacks were installed in 2019 as well. At the heart of its success is an attention to detail; using malted floor barley and production methods to enhance the flavour of the new make spirit. An intensive cask programme ensures that Bimber works well in a variety of wooden vessels from a young age. Demand means that releases from the distillery are in short supply, with even a small batch range selling out. We can expect more Bimber in 2021 including a new series based on stations within the London Underground network.

We believe in giving our customers a fair amount of time to increase their bid should they wish. Last second sniping isn’t in the spirit of our auctions and by using this system there is no benefit to doing so.
    Selling Whisky should be a pleasurable experience not a complicated one! We've broken down the process into a few easy-to follow steps.

    The first step is to get your whisky to us. We can help with courier collections, or you can arrange transport yourself. Once at Just Whisky, we’ll handle photography and description of your lots and enter your whisky into our auction. We take payment, then pay you within 14 days of the auction end date.
