    The Spirit of the Underground Series celebrates one of the great engineering projects of the past 200 years. A subterranean labyrinth steeped in history that empowers the true lifeblood of London - it's people. This exceptional single cask release drawn from an American Oak Ex-Bourbon cask celebrates Baker Street tube station. The station was opened to the public on 10th January 1863 as one of the original stations on the World's first underground railway. Named after the buider William Baker, the location is famous for it's connection to the fictional detective Sherlock. Holmes and also for the 1978 Gerry Raferty song. Cask No.126 has produceed only 264 individually numbered bottles, all at cask strength (58.1%).

    This London based distillery was founded in 2015 and hasn’t looked back since. Gaining local, then national popularity and in 2020, a series of single cask releases specific to various countries abroad. Starting out with a small 2 still set-up, Bimber has recently expanded to meet demand. Additional wooden washbacks were installed in 2019 as well. At the heart of its success is an attention to detail; using malted floor barley and production methods to enhance the flavour of the new make spirit. An intensive cask programme ensures that Bimber works well in a variety of wooden vessels from a young age. Demand means that releases from the distillery are in short supply, with even a small batch range selling out. We can expect more Bimber in 2021 including a new series based on stations within the London Underground network.

    The first step is to get your whisky to us. We can help with courier collections, or you can arrange transport yourself. Once at Just Whisky, we’ll handle photography and description of your lots and enter your whisky into our auction. We take payment, then pay you within 14 days of the auction end date.
