    An important bottling from Bimber distillery, the first London whisky distillery for over 100 years. Originally selected for the inaugural Southport Whisky Festival in 2020 and bottled on the 7th of July of that year. The festival had to be moved to online due to the Global Pandemic. As a result this whisky was offered to a truly worldwide audience as enthusiasts who wouldn't have been able to attend the festival got their drams sent by post. This whisky is a marker in the Bimber evolution timeline for sure. Matured in a single American Oak ex-bourbon cask (No.127). Natural colour. Non-chill-filtered. One of only 275 individually numbered bottles.

    This London based distillery was founded in 2015 and hasn’t looked back since. Gaining local, then national popularity and in 2020, a series of single cask releases specific to various countries abroad. Starting out with a small 2 still set-up, Bimber has recently expanded to meet demand. Additional wooden washbacks were installed in 2019 as well. At the heart of its success is an attention to detail; using malted floor barley and production methods to enhance the flavour of the new make spirit. An intensive cask programme ensures that Bimber works well in a variety of wooden vessels from a young age. Demand means that releases from the distillery are in short supply, with even a small batch range selling out. We can expect more Bimber in 2021 including a new series based on stations within the London Underground network.

    The first step is to get your whisky to us. We can help with courier collections, or you can arrange transport yourself. Once at Just Whisky, we’ll handle photography and description of your lots and enter your whisky into our auction. We take payment, then pay you within 14 days of the auction end date.
