Bimber Cask Reserve 2019

From the Bimber distillery, London, established in 2015 and the first operational distillery in the capital for over 100 years. Everything they do is craft, from barley to bottle. Single farm barley sourced from Hampshire, traditional floor malting, low and slow fermentation in open top wooden washbacks and direct fire copper pot distillation. In its formative years, the distillery raised funds through a Founder Club offering with only 200 members. These members were exclusively offered the 'not to be repeated' chance to purchase casks for private bottling. These casks were Vigin oak, blood tubs filled with unpeated spirit and matured for around 3 years after resting in sight of the stills themselves. This particular bottling matured for 40 months, yielding only 32 bottles. Bottled at cask strength with no colouring or filtration. Of any kind! Unusually, the bottle itself contains a quantity of char straight from the cask! This whisky was offered by the dram at the Melody Whisky Bar in London where those who got to try it, described it as something very special indeed. A must for any Bimber fan.
